Summer is here and that means it's time for delicious summer food! This Peach, Tomato, Burrata Salad will leave you begging for more!
Now, if you know me at all you know that I do not like to cook. At all. My husband does most of the cooking around here {#blessed} and I ain't complaining about it one bit! But every once in a great while I get the urge to make something fantastic. And last night was one of those nights.
A couple of weeks ago we were at a friends house for a monthly dinner that she hosts. My friend Meredith goes out of her way when hosting. She makes THE MOST delicious food I've ever eaten. I mean. She even makes a burger bar into something magical. On this particular night she made the most amazing salad with peaches, tomatoes, burrata {if you haven't tried burrata then go buy some stat}, basil, and homemade croutons. It was to die for.
The original recipe can be found at Art de Fete but I did a little tweaking. I also used the Pioneer Woman's recipe for Homemade Croutons, which I will be making all the time now!
Here's what you'll need {I bought all of it at Trader Joes ;) }
Instructions:
Pre-heat oven to 425°
Cut peaches in to small chunks and cut tomatoes in half. Then toss in olive oil and salt and pepper. Once evenly coated with olive oil and salt and pepper, place on cookie sheet and spread evenly. Roast in oven for 10-15 minutes or until slightly browned. (This is where I tweaked. The original recipe called for grilling the peaches but our grill taken by all the meat my hubby was grilling.)
Once browned, remove from oven and place on serving dish to cool. We didn't let ours cool very long because we really wanted to eat!
Tear burrata cheese with your fingers into bite size chunks and scatter on salad.
Scatter fresh croutons.
Drizzle with balsamic glaze.
Sprinkle with fresh basil.
